Rice Recipes  is the important part of the meal there are a number of ways to make quick and easy Rice Recipes using simple and basic ingredients and spices.in this post I will give you step by step method to prepare the 5 rice dish like Mexican rice dish, coconut rice dish , palak corn rice dish, mushroom fried rice dish , tomato rice dish.for these dish you can use any rice i am using basamati rice.

Home Made Rice Recipes

1 – MEXICAN RICE DISH

INGREDIENTS

  • one cup of soaked and drained basmati rice.
  • one tablespoon desi ghee.
  • one big size chopped onion.
  • five to six garlic cloves.
  • one small size chopped onion.
  • one small size chopped tomato.
  • one chopped capsicum.
  • one chopped cabbage (patha gobi).
  • one teaspoon soy sauce.
  • one teaspoon red chili powder
  • salt to taste.
  • one tablespoon oil.

PREPARATION

  • take desi ghee in frying pan and add chopped onion and garlic cloves once it turns little brown add soaked rice also add one cup off water and wait for ten minutes in medium flame .after 10 minutes keep it aside
  • take another pan and add oil into it after oil gets hot add chopped onion once it gets brown add chopped capsicum, cabbage(pathagobi), tomato stir it properly for two minutes .when it gets half cooked add red chilli powder, soy sauce, salt and cooked rice.
  • mix the rice properly with soft hand.cover the pan and cook on low flame for more 10/15 minutes.
  • rice dish is ready to serve with curd or mint chutney

2 – COCONUT RICE

INGREDIENTS

  • 1 cup of soaked and drained basmati rice.
  • 3 cup of coconut milk.
  • 1 cup of jaggery.
  • 2 teaspoon desi ghee.
  • half teaspoon jaifall powder.
  • half teaspoon cardamom powder(Chooti Elaichi).
  • 1 cardamom.
  • 3 cloves(Laung).
  • 10/12 cashew nuts.
  • 10/12 kishmish (raisins).
  • 5/6 chopped almonds.
  • salt to taste.

PREPARATION

  • heat  desi ghee  on a frying pan over a medium flame add cloves ,cardamom and rice stir it for two minutes .know add coconut milk and salt and  wait for 10 minutes in medium flam stir it 2/3 time in between.after 10 minutes cover the pan and keep it in a low flame.keep it aside
  • take another pan add desi ghee add jaggery and 1/4 of coconut milk in low flame for 4/5 minutes and stir it in between once the jaggery get desolved and rice, kiskmish, cashew nuts, almonds,jaifall powder and stir it properly with soft hand. keep the flame in low and cook for 5 minutes.
  • Rice Recipes is ready to serve garnish with chopped dry fruits.

3 – PALAK CORN RICE

INGREDIENTS

  • 2 cup of soaked and drained basmati rice
  • 2 tbsp desi ghee
  • 1 cup boiled sweet corn
  • a half cup of palak puree.
  • 3/4 garlic cloves.
  • 1 medium size chopped onion.
  • 4/5 chopped green chili.
  • coriander
  • chopped garlic.
  • 2 tej patta(bay leaf),1 dalchini (cinnamon sticks),3 kali mirch (black pepper)
  • 2 long cloves, 1 tsp shahi jeera.
  • salt to taste.

PREPARATION

  • in a heated frying pan add ghee once ghee gets hot add ginger-garlic and chili-coriander paste.and stir it for 2/3 minutes in low flame.
  • next, add chopped onion and dry masala and stir it in medium flame for 2 minutes
  • add rice, spinach(palak) puree, corn, salt and stir it.keep it for 2 minutes in low flame.
  • add water and mix with soft hand .wait for 10 minutes keep the flame low.
  • know cover the pan and cooked for more 5/7 minutes in low flame.stir it in between
  • dish is ready to serve garnish with freshly chopped coriander.

 

4 – Mushroom Fried Rice Recipes

INGREDIENTS

  • Long grained basmati rice(soaked) – 1 cup.
  • 250 grams of mushrooms (cut into 4 pieces).
  • 4 cups of water.
  • 3 finely chopped garlic cloves.
  • 3 medium size chopped onion.
  • naturally fermented soy sauce – 1 tablespoon.
  • 4 tablespoon oil.
  • black pepper.
  • salt to taste.
  • celery or spring onion greens.

PREPARING THE RICE

  • First in a fresh running water clean the rice 2 to 3 times.
  • then cook the rice using 5 cups of water add few drops of oil and pinch of salt.
  • do not cook completely just half cooked it.and keep it aside
  • and let the rice cool completely.

PREPARATION

  • Take a thick bottom frying pan add cooking oil.
  • once oil gets heated add chopped garlic and onion and saute it for 2 minutes in low flame.till it turns golden brown .do not burn the onion.
  • next, add chopped mushroom and stir it on high flame till it changes its color to golden brown.
  • you will first notice whole mixture become little watery and slowly the water evaporates and oil start floating on the top of the mixture.
  • one by one adds soy sauce, black pepper, and salt.
  • stit the mix for 2 to 3 minutes.
  • next, add half cooked rice and with soft hand stir gently 2 to 3 times.
  • your dish is ready to serve garnished with celery or spring onion greens.

Notes 

  • to make the dish spicier you can add red chili powder.
  • you can use fresh coriander also for garnishing.
  • you can use freshly grated coconut for garnishing

 

5 – TOMATO RICE RECIPES

INGREDIENTS

  • 2 Cup basmati rice.
  • 4 to 5 tomatoes.
  • 3 tablespoon oil or desi ghee.
  • 2 small size capsicum.
  • 1 large size onion.
  • 1 small size ginger.
  • half cup fresh dry coconut.
  • 6 garlic flakes.
  • 3 cloves (lavang)
  • 1 teaspoon cumin seed powder.
  • 1 teaspoon cumin seeds.
  • 2 bay leaves.
  • small piece cinnamon.
  • chopped coriander leaves
  • salt to taste.

PREPARATION FOR TOMATO RICE.

  • Make fine sliced of onion and capsicum.
  • clean the rice in a fresh running water 2 to 3 tomes.
  • prepare the fine paste using all the raw ingredients like tomatoes, garlic, ginger,coconut, green chilies, cinnamon, cloves, jeera powder , coriander leaves.

PREPARATION 

  • heat oil or ghee in a thick coated frying pan.
  • once oil heated one by one add sliced onion bay leaves and cumin seeds saute it in low flame. till it turns golden brown.
  • next, add capsicum and saute it on low flame.
  • add prepared paste and rice to the pan. add some water and salt.
  • cover the pan and cook the rice till it done.cook in low flame.
  • garnish the dish with freshly grated coconut rice and chopped coriander leaves.
  • your tomato rice dish is ready to serve.

NOTE

  • for adding the paste and rice use the same measuring cup.
  • if you want your dish more spice you can add green chilies also.
  • you can also pressure cook the rice.
  • when you are cooking the rice in a pan make sure it does not stick to the pan.
