Dum Paneer Kali Mirch
Dum Paneer Kali Mirch is a very delicious dish you will notice the strong taste of kali Mirch .you will notice different taste in a different part of the country because of special ingredients (spices)in the dish .
INGREDIENTS
- 500 gms paneer cut in cube size.
- 1 cup of chopped coriander leaves.
- 1/2 cup of fresh chopped mint leaves.
- 1 cup of yogurt(curd).
- 2 tbsp puree desi ghee.
- 1 stick cinnamon(dalchini).
- 2 bay leaves(tej patta).
- 4-5 cloves(loung).
- 3-4 green cardamoms (chhoti illaichi).
- 1 tsp cumin powder(jeera powder).
- 2 tbsp coriander powder(dhania powder).
- salt to taste.
PASTE INGREDIENTS
- 3-4 green chilies.
- 5 garlic flakes.
- small piece chopped ginger.
- 5 medium size onion .sliced and fried until it turns golden brown.
DUM INGREDIENTS
- 1 tbsp peppercorns(kali-mirch).crushed
- 1 tsp garam masala.
- 2 cup fresh cream.
METHOD TO PREPARE DUM PANEER KALI MIRCH.
- In an oil heated pan (kadhai) add 5 medium sizes chopped onion .deep fry it till it gets golden brown add little salt during deep frying.
- once onion gets fried grind the onion along with ginger, garlic, and green chilies add some water.
- heat the pan and add desi ghee.
- one by one add all the ingredients start with adding 2-bay leaves (tej-patta) ,3/4-green cardamoms(chhoti illaichi),1-small stick of cinnamon (dalchini) , and 4- cloves (loung) .and saute it in a low flame.
- next add ginger-garlic, onion paste and saute it for more 3 minutes in a very low flame.
- add yogurt and mix well.
- next, add all the dry masala like coriander powder, cumin(jeera) powder, and salt and stir it for more 2 minutes.
- add 3 cups of water and wait till it brings to a boil.
- once it boils add paneer cubes and mix it .also add chopped coriander and fresh mint leaves.and stir it.
- add crushed black peppercorns and garam masala powder.
- and stir it .also add fresh cream
- cover the pan with lid using aluminum foil or you can use wheat flour dough and cook it in a low flame for more 15 minutes.
- and the dish is ready to serve.
